The k’pane Story
K’pane Artisan Bakery began back in 2010, when after knocking down a few walls of an existing shop at the Jetty Village Shopping Centre, Bret & Kirsty Knight built an authentic sourdough bakery in Coffs Harbour. We opened the doors early one Sunday morning in February with the plan to delight your culinary senses and bring an authentic artisan bakery to the Coffs Harbour region. Our aim was to create beautiful wholesome sourdough loaves, delicious pastries, cakes & tarts without compromise. To this day we pride ourselves still, in making delicious artisan bakery delights that tempt your tastebuds and bring a smile to your face.
Bret Knight began his baking life as an apprentice baker at Newrybar bakery (now the Harvest Restaurant site), outside Bangalow in northern NSW from 1994-96. He learnt authentic sourdough baking methods and age old artisan techniques and fermentation processes to develop intense, but subtle flavours in the sourdough bread making. It was a great place to learn the intrinsic techniques of baking in Newrybar Bakery’s original 107 year old wood fired oven. Bret then moved on to Sydney where he worked at various bakeries in Bondi, Surrey Hills & Botany and then finally became Head Pastry Chef at the two hatted Otto Restaurant in Woolloomoolloo Wharf. At Otto Restaurant he worked under well known Sydney Chef’s James Kidman and Ed Hamoulgi (fast Ed, Better Homes & Gardens). This is where Bret’s passion grew for fine pastries & advanced cooking techniques. This inspiration has carried through to the treats we serve at k’pane Artisan bakery.
